Before a Denver trip, I had asked my friend @tineywristwatch who writes for @denverpost for any recs and she sent their article about @sapsuarestaurant, named one of this summer’s Top 8 restaurant openings by @bonappetitmag. I was able to catch an early dinner res for 4 last Sunday and had a wonderful experience.
The location has a great ambiance and feel to it. Bar seats are open for walk ins and the tables seat plenty for reservations, but keeping it cozy and manageable where staff can give top notch service. Although we’re in this age of privacy/security importance, I do appreciate the nod to the entire staff on the menu showcasing everyone on the team.
Food was fantastic, dishes are “non-traditional” with flavors inspired by traditional Vietnamese food. Toni, is exceptional and took amazing care of us, even recommending the rice porridge dish labeling it as “last meal ever” worthy. Unfortunately, the dish I was most looking forward to, the Hamachi collar, was already sold out, but will happily return next trip to try it out! We ordered all 3 desserts and they each were great in their own ways, none of them overly sweet and great flavor pairings.
I know opening weeks are stressful and hectic, but everything from booking the reservation through leaving the restaurant is seamless. Everyone on staff is super friendly and helpful, even the bartender taking a second thanking us as we left.
